200g all-purpose flour (about 1 2/3 cups)

5g baking powder (1 teaspoon)

A pinch of salt

125ml milk (1/2 cup)

20g vegetable oil (4 teaspoons)

2 eggs

1/4 teaspoon lemon zest (optional, for flavor)

Instructions
 

In a large mixing bowl, combine the flour, baking powder, and salt

    In a separate bowl, whisk together the milk, vegetable oil, eggs, and lemon zest (if using).

      Gradually add the wet ingredients to the dry ingredients, mixing until you have a smooth batter. If the batter seems too thick, add a little more milk until you reach a pourable consistency

        Heat a non-stick pan over medium heat

          Pour about 1/4 cup of batter into the pan for each pancake. Cook for about 2-3 minutes on each side, or until golden brown

            Repeat with the remaining batter.
